Abstract: The purpose of this booklet is to assist farmers in producing fertilizer by utilizing organic waste from fruit processing through a process known as composting.                                                                                        This booklet is the result of an extension project carried out in the Rural Community&#xD;
of Iracema in the municipality of Castanhal, Pará, based on initiatives that guide and inform rural producers about the importance and benefits of utilizing waste available on the farm, using composting as a technique for reusing organic fruit waste produced in agro-industrial processing facilities.&#xD;
Thus, one of the objectives of the project developed in the Iracema community was to contribute to good practices in the production and processing of agricultural and livestock products, taking into account aspects of sustainable development, food safety and sovereignty, agroecology, cleaner production, and waste management.</summary>

Abstract: This guide was developed based on a study conducted in the islands of the municipality of Mocajuba, within riverine properties situated in the mesoregion of northeastern Pará, on the left bank of the Tocantins River in&#xD;
the state of Pará, Brazil. Presently, the state stands as the nation's foremost cocoa producer, exhibiting significant potential for the cultivation of differentiated fermented and dried cocoa beans due to their unique&#xD;
physicochemical and organoleptic properties (aroma and flavor). The native cacao tree (Theobroma cacao L.) flourishes along the Tocantins River and its tributaries, coexisting with açaí palms (Euterpe oleracea), rubber trees (Hevea brasiliensis), andiroba (Carapa guianensis), and virola (Virola surinamensis), among others. These regions are characterized by floodplain forests that possess natural fertility—deemed medium to high—and are well-adapted to the seasonal water cycle. At the project's inception in December 2021, the majority of cocoa beans from the 'island cocoa' of the municipality were sold at low added value, as they failed to meet all quality standards.

Abstract: The lowland cocoa of the Mocajuba islands is of great importance to the region and offers the possibility of&#xD;
balancing socially fair production that generates employment and income, is economically viable for producers, and is environmentally sound by preserving the forest. The region's cocoa is a cultural and historical symbol of the sustainable relationship between man and nature. Given this, it can be said that there is a favorable scenario for the cultivation of cocoa produced by family farmers on the islands, making the cultivation of this fruit an activity of territorial importance that enables sustainable production in these areas.  The project proposal is to boost the production of cocoa beans suitable for consumption, for the manufacture of chocolate and other by-products, introducing new concepts and practices that enable the production of high-quality cocoa beans to serve specific markets such as organic, fine, or gourmet cocoa.
